Meat Pie


I have spent a reasonable amount of my future pension on meat pie. Seriously!! I have travelled almost two hours for meat pie several times. *covers face*. The amount of time I have suffered over meat pie - Chai! So let me save myself and some of you like me from the constant suffering of accessing meat pie.

Meat pie is a Nigerian snack that is made from flour, mince meat, potatoes carrots etc.. It is quite simple to make and can be stored in the refrigerator. It is also part of the small chops family in any Nigerian party and is loved by many.

Ingredients

500g Butter
1kg Plain Flour
1tbsp baking powder
1 egg
500g mince meat
1 onion
1/2 tsp of thyme
2 carrots
1 potato
2 Knorr cubes
1/2 cup of water
Vegetable oil

Peel the potato and cut it in cubes with the carrots and onions. Heat the cooking oil, add the carrots, onions, potatoes, mince meat thyme and seasoning. Add a bit of water and stir till the meat is all brown.


In a cup add two tbsp of plain flour in water and dissolve. Add the mixture to the meat and switch off the heat. This allows the meat to stay moist whilst baking.



Whisk the egg and place aside.

Add the butter to the flour and knead gradually adding little water at a time. You will realise you do not need a lot of water.

The dough should not be soft or elastic. It should stand alone when pulled apart.


Roll out the dough, using a round cutter or the cover of a small pot like I have done (lol) cut through the dough.



Add the meat filling, using a fork, spread a bit of the egg mixture at the tip of the dough and cover ensuring you do not have any spillage.  Using the fork, pin the tips down all the way round like so.


Rub the oven tray with butter and put the raw meat pie in. Using the rest of the egg mixture rub it on the meat pie to give it a golden. 

Put it in the oven for 40 - 45 minutes at 170 degrees.


I have also made mini meat pies for canapés. Use the same recipe but cut the dough in smaller circles.
