Classic Spaghetti & Salmon

One of my favourite dishes is spaghetti. I eat it with almost anything. I will be posting different ways I eat my spaghetti on the blog. For me, it’s like rice. You can make jollof rice, fried rice, rice and beans etc...  
When it comes to my cooking ideology, one of my belief is food doesn’t have to be complicated to be good. This meal will take less than 30 minutes providing you have all the ingredients to hand

Ingredients

250g Fresh Spaghetti
400g Salmon Fillets
250g King Prawns
Bunch of Parsley
2 handfuls Spinach or Rockets
Extra virgin olive oil
2 tsp of garlic granules
2 shallots
250g cherry tomatoes
1tablespoon of tomato puree
1 scotch bonnet
1 Lemon
Water
Sea salt to taste

Slice your shallots, chillies, cherry tomatoes, and put aside.
Finely chop your parsley, cut the lemon in two. Add the chopped parsley, some shallots, some chillies, lemon juice and olive oil to the salmon. Add salt to taste. Marinate the whole salmon, and place in the oven. Gas mark 5; 170C. Leave in there for 20-25 minutes.
In a large pan, add the olive oil, remaining shallots and fry for few minutes. Add the cherry tomatoes, tomato puree, remaining chillies. Let it cook for 10 minutes. If it is too thick add little water. Add the prawns, garlic granules and salt to taste.
Put the fresh spaghetti in a pot, add hot water and let it cook for 5 minutes. Salt is optional. When done place the Spaghetti in a sieve but don’t drain all the water. You need some of the water to mix in some of the sauce.
Put the spaghetti back in the pot, take a spoonful of the sauce and mix in the spaghetti till it’s all covered. By this time the salmon should be ready.
Lay the spinach on the plate and place the spaghetti, sauce and salmon on top.
