Sweet Mackerel Stew


Sweet peppers are sweeter than ordinary bell peppers. You can tell the difference as they are pointy and long compared to bell peppers.

You can bake it for few minutes or have it fresh like I did.

Ingredients


2 Mackerels
2 tbsp of Coconut oil
3 Pointed Red Peppers
1 Onion
2 Scotch bonnet
Rosemary
Oregano
Salt to taste
Handful of fresh parsley



Clean the mackerel by removing the guts or you can cut the head off if your prefer.
Trim the tops of the peppers, cut the onions and blend till rough. Do not blend till smooth.
In a pan add two tablespoon of coconut oil. When hot add the pepper paste.
Add all seasoning, rosemary, oregano and salt to taste.
Let it cook for 10 minutes.

Add the Mackerel ensuring the stew covers it all.

After 10 minutes switch heat off, garnish with fresh parsley

Serve with rice, pasta, Agege bread, new potatoes or sweet potatoes.
