Hope you all had a wonderful Christmas. I am currently nursing a serious hangover but it was so worth it. Plans for boxing day sale is so out of the window.

Corn Dogs for Christmas

Corn Dogs was originated in America and mostly served in state fair. It symbolises celebration and fun. Which is why this Christmas I think you should all add corn dogs to your menu.
The only thing is if you decide to make them, make a big batch as your guest will be screaming for more.
What makes corn dogs so special is the batter. Every-time I make it, all I remember is eating the little batter left on the stick. The batter is so simple to make but so rewarding.

Ingredients

170g Cornmeal
130g Plain flour
60g sugar
3tsp baking powder
1 large egg
4tbsp on powdered milk
220ml water
pinch of black pepper
pinch of nutmeg
pinch of salt
8 large hot dogs
8 or 16 wooden skewers
Vegetable oil
Dressing mustard, ketchup, BBQ sauce or mayonaise

Yam, Omelette and Corned Beef Stew

So it’s Christmas morning everyone is automatically hungry after a late night from Christmas Eve. The food is not going to get ready till 1or 2pm.
If you are like me, you are probably hung-over from waiting up to open all your presents and trying them all out so food will probably be ready by 3 or 4pm.
Send everyone back to bed or relaxing mode with this hearty, warm and filling dish.


Ingredients
Yam
Eggs
Salt
Sugar
Milk
Tomatoes
Onion
Scotch bonnet
Seasoning cube
Corned beef
Vegetable Oil
Cut the yam, peel the skin off, rinse, add salt and sugar and boil till soft.

Love ChinChin is a delicious snack inspired from a famous family recipe. The product has been launched over a year now but since then it has been making waves with their recent deal with Tesco.

The Unofficial Fried Rice

I call it the unofficial fried rice because this is not the standard Nigerian fried rice. I think fried rice is one of those meals you do not need a recipe for. You work with what you have at home. I like the fact it allows creativity, you add different ingredients together to create a masterpiece.
This recipe was built on this concept. It came out so good that it’s one of my signature dishes. I love the fact I can twist it so many times and it will still taste amazeballs.
So this Christmas, if you are looking for a change, that will impress your guest and family, look no further.

Interview with the Co-Owner of Enish Nigerian Restaurant & Grill


I have ranted so much about the lack of an up-scale Nigerian restaurant in London and after so much searching I am glad to announce I have found one of the best Nigerian restaurants in the UK. Jointly owned by Olushola and Eniola Medupin with decades of restaurant experience there is no surprise why it has got rave review in the British press.
Enish Nigerian Restaurant and Grill is located in South London on Lewisham High Street. It’s a stylish restaurant decorated in contemporary and vintage objects while serving the best of modern Nigerian dishes.  
It offers a choice of dining area; the main dining room, an underground executive suite for private dining and functions, a BBQ lounge in summer. The bar is a must visit destination offering vibrant but delicious cocktails in a relaxed and sophisticated atmosphere.
I caught up with Eniola Medupin to discuss what makes Enish one of the best Nigerian restaurants and some of the challenges they face.

Hello December


Happy New Month
I am extremely excited. I can't believe we are in December already. This year  as been totally awesome from 1st of January till date. I have so much to be thankful for. God is truly faithful.
I have grown so much this year and I know 2015 will be greater, bigger and better for us all.
