Mixed Peppersoup

Peppersoup is one of my favourite dishes to cook, its quick, light and simple. Whether it's meat or seafood your taste buds will be buzzing with an outburst of flavours.

I decided to use a different peppersoup spice by Naija Infusion and I must say it is second to none. In as much as I wanted to take credit for it all, I must say the spices added that special touch. 

Although this is not a sponsored post but I can't help but recommend the rest of their products. Naija Infusion also have other spices like Jollof Seasoning and Suya Spice. The suya spice is one of those spices you can season with anything; fish, meat, noodles, eggs literally anything. I have not tried the Jollof seasoning but with the two spices I have tried I have no doubt it will be as brilliant as the others. 

Ingredients 

1 seasoning cube 
Naija Infusion Pepppersoup Spice 
1 tbsp of All purpose seasoning 
2 tbsp Vegetable Oil 
Lamb Shoulder 
Langoustine 
Prawns 
Kale 
Water 

Clean the lamb and season it with the All purpose seasoning.

Chimichurri Sauce

Chimichurri sauce is originally from Argentina. It's used to season grilled meat.  

Ingredients

5 Cloves of Garlic
2 small Shallot
Bunch of fresh parsley
1 tbsp of Dried Oregano

1/2 tsp of crushed chillies
3 tbsp of red wine vinegar
1/2 a lime juice
2 tbsp of sunflower or olive oil
Sea salt to taste

Soft & Fluffy Meaty Pizza


One of the things I learnt in Rome is homemade pizza is always better than shop bought pizza. It is easy, quick and FUN! You can control what goes in and also measure calorie intake. So if you are looking for a soft, fluffy, life changing pizza, you are definitely on the right page.


Ingredients


300g Strong Bread Flour

125ml of warm water

1 sachet of Yeast

1 tbsp of Olive Oil

Mozzarella Cheese

Bell Peppers

Meatballs

Pepperoni

Vegetable Oil

1 Chopped plum tomatoes

Garlic

Oregano

Salt

Sweet Mackerel Stew


Sweet peppers are sweeter than ordinary bell peppers. You can tell the difference as they are pointy and long compared to bell peppers.

You can bake it for few minutes or have it fresh like I did.

Ingredients


2 Mackerels
2 tbsp of Coconut oil
3 Pointed Red Peppers
1 Onion
2 Scotch bonnet
Rosemary
Oregano
Salt to taste
Handful of fresh parsley
